I thought I would share a short roundup of a few winter recipes I have tried and love lately. You'll remember a lot of these from Instagram Stories. Let me know if you want to see more of this!

Blue Apron Costco Cookbook Chicken & Pancetta and Pea Risotto - This cookbook is exclusive to Costco but is so good! You basically dip the thin cut chicken into flour, then eggs, then Panko and cook in the oven.
Crock Pot Buffalo Chicken Wraps - SOO easy to make and one of our favorite recipes
Baked Basil Salmon - Eat Yourself Skinny is one of my favorite food bloggers and this recipe was so good! We used pearled cous cous on the side.
(below) This is what it is supposed to look like! I was too skeezed to buy the giant Alaskan salmon so i just ordered two smaller pieces from the seafood counter instead. We just ate around the skin
It was really good!
Half Baked Harvest Turkey Tamale Pie - This was supposed to be made with leftover turkey from thanksgiving, but we just used ground turkey instead. As you can tell we overdo it on the toppings! This has a red enchilada sauce base and is so good!
Roast Chicken - Zach and I love making roast chicken and veggies on Sunday night. We recently got a convection oven and cooked this chicken in an hour and twenty minutes. Just make sure to baste every half hour.
Cheesy Amish Breakfast Casserole - If you make anything off this list, MAKE THIS. Certainly not low fat, but this dish packs in a ton of flavor and you can have it for breakfast all week.
