Tex-Mex One-Skillet Pasta

This is one of my all time favorite recipes and it is so easy and quick to make. Original link to this recipe is here but I have changed it a bit from the original.

Ingredients:

1 pack Chicken Sausage - I like Chipotle & Monterey Jack

1 mediuim white onion

1 can corn

1 jalepeno

1 cup green scallions

2 cups chicken broth

1 {10 oz} can Rotel

8 oz orecchiette pasta

Garnish:

Shredded Cheddar

Scallions

Avocado cubed

I like to start by chopping everything up since this is such a fast recipe.

First Step:

slice and saute the chicken sausage until the edges are browned

Next: Add the onion/scallion mixture and the jalepeno, saute for 5 min and add the corn.

Next: Add the Rotel and 2 cups chicken broth

Rather than buy chicken broth, I like to just buy the below base broth and mix a large spoonful in with 2 cups hot water.

Let this sit for about 20 minutes for the pasta to cook.

Garnish with the scallions, cheese and avocado and you are good to go!
